Emaar Hospitality Group has joined hands with the well-respected technology firm, Winnow, to decrease food waste across its hotels, using advanced data analytics.
The new strategy is being adopted at 12 of the Group’s hotels and is expected to reduce food waste by half.
Winnow will provide chefs with digital tools to run more profitable kitchens. With the help of a digital scale and a connected tablet, weight is recorded automatically and the user selects the reason and identifies the item/dish using the tablet. Chefs will benefit from daily reports, giving them total control over their kitchens by pinpointing the items that are being wasted. Kitchens using Winnow typically see their food costs reduced by three to eight per cent.
Emaar Hospitality Group hotels that fall under the Address Hotels + Resorts, Vida Hotels and Resorts, and Rove Hotels brands will be equipped with Winnow’s smart scales, allowing their chefs to seamlessly track food waste.
This new initiative follows the Group’s recent promise to help save one million meals in the UAE in 2018.
